Chinese Noodles Recipe

PREP TIME: 8 servings

Ingredients – Egg Noodles

  • 4 large eggs
  • 1 tablespoon water
  • 3-1/2 cups sifted all-purpose flour

Ingredients – For Chinese Noodles

  • 1/2 cup peanut oil
  • 2 tablespoons rice vinegar or white wine vinegar
  • 1 tablespoon dry sherry
  • 2-1/2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon crushed red pepper
  • 1/2 teaspoon ground ginger
  • 1 tablespoon brown sugar
  • 1 tablespoon chopped onion
  • 1/4 cup diced green pepper
  • 1 recipe Basic Egg Noodle Pasta

Directions

  1. To Cook Pasta, Add 1 tablespoon salt and 1 tablespoon oil to 6 quarts boiling water. Gradually add pasta and continue to cook at a slow boil until pasta is “al dente” or slightly firm to the bite. Pasta floats on top of the water as it cooks, so stir occasionally to keep pasta cooking evenly. When done cooking, drain in a colander.
  2. Combine all ingredients. Toss well and refrigerate 2 hours, stirring occasionally.
