Rated 5 out of 5 by from best pan ever - if you use it right If you are tired of babying your nonstick pans and never getting anything properly browned, this is the pan for you - but you need to season it first. Fry stuff in it with fats or oil a few times, and it starts to behave like non-stick. It's really much better for browning food than a non-stick fry pan (why they call it an omelette pan is beyond me) and makes great pan sauces and gravies. But people, you HAVE to use oil or fat in it, like the professionals do - and that's why it's called a commercial pan. It's built to take hard use and make great food. If you want something to fry an egg without fats, buy a different pan.

Rated 5 out of 5 by from Fantastic pan. We tested this pan out by making jalepeno, red pepper johnny cakes. It worked like a charm. It proved to heat evenlyt on a medium size burner. The johnny cakes were evenly browned on all sides and they didn't stick to the pan at all. Our stove is not a great one so that says a lot of the pan. I can't wait to see how well the pans works when we get the new stove. The handle is shaped perfectly for my hands and makes it super easy to grip plus it's relatively light. Definite a pan to add to your arsenal. *While I received this product for free, the opinions and thoughts included in this review are my own

Rated 5 out of 5 by from Still Going Strong! I have been using my Commercial Hard Anodized skillets for over 8 years. They have outlasted two sets of nonstick skillets, and they have earned a spot in the cabinet next to my treasured cast iron cookware. I use my skillets often, and after all this time, they are in great shape. I enjoy being able to sear steaks in my 12" skillet, finishing them off in a blazing hot oven, and deglazing for a wonderful pan sauce. After deglazing, clean up is a breeze. I use Dawn Power Plus to remove any stuck on food. The hard anodized line is the next best thing to cast iron!

Rated 2 out of 5 by from Warps I have had to return this product multiple times because no matter how much I baby this pan it warps. I originally purchased this as part of the hard anodized set. All of the other pans perform flawlessly but this warps and that is unacceptable. In addition to that, the series is now called the commercial series, which apparently means that now you get a cheap, ugly, thinner handle on the pan that warps. I use may brands of cookware and until now had a good opinion of Calphalon but wont be recommending them any time soon after this experience. I would have given one star due to the warping and the handle but I do get good customer service (prompt replacement of pan when returned) and the pan cooks very well. Just be aware that it warps.
