Rated 5 out of 5 by from Good Boning and Fileting Knives are Hard to Find I have been trying to find a good boning and fileting knife for years. I want a quality knife made from a solid piece of steel with a flexible blade. Every quality knife I buy that says it is for boning and fileting has a stiff blade . . . Until now! This was the knife I have been looking for. The knife is well built, and the blade is extremely flexible and great for separating meat from bones and gristle. I also bought the J.A. Henckels International Forged Premio before I purchased this knife because it was less expensive. That is a well built knife too, but has a stiff blade. If you are looking for a flexible blade, this is the knife.
